Mom's Apple Cake
6 apples, I used McIntosh apples
1 T cinnamon
5 T sugar
2 3/4 cups flour
1 T baking powder
1 tsp salt
1 cup vegetable oil
2 cups sugar
1/4 cup orange juice
2 1/2 tsp vanilla
4 eggs
1 cup walnuts, chopped
Preheat oven to 350 degrees. Grease a tube pan. Peel, core and chop apples into chunks. Toss with cinnamon and sugar and set aside.
Stir together flour, baking powder and salt in a large mixing bowl. In a separate bowl, whisk together oil, orange juice, sugar and vanilla. Mix wet ingredients into the dry ones, then add eggs, one at a time. Scrape down the bowl to ensure all ingredients are incorporated.
Pour half of batter into prepared pan. Spread half of apples over it. Pour the remaining batter over the apples and arrange the remaining apples on top. Bake for about 1 1/2 hours, or until a tester comes out clean.
I am changing the name of this cake to Rachael's Apple Cake just because she's the one that discovered it!!!

Mmm.. that cake looks great! I'll have to try it sometime. I have an apple cake recipe I got from an elderly member of the Cambrian Park church in San Jose. It's really easy to make and uses lots of apples. ..and the best part is you don't even peel the apples. It calls for cream cheese frosting but I'm sure you could omit the frosting if you wanted and it would still be really good. It's called "Raw Apple Cake". Let me know if you're interested.
Glad you tried the cake. Isn't is good?! I ate a little sliver three times a day, while we had it! I'm tempted to make it again, but since I can't stop eating it, maybe I should wait a bit! :)
And, I merely discovered it on the Internet (on another blog, mind you. But I suppose "Rachael's Apple Cake" is better for you to refer to it than "The Apple Cake Recipe that Rachael found on the Internet and sent me" so go ahead!

Looks great, reminds me of that apple bread I used to make when I was a kid. I wonder if you still have that recipe, it was so good. Do you remember?
